    Drain and Dry:

    • Drain the potatoes and spread them out on a towel. Pat completely dry—this is essential to avoid splattering and soggy fries.

    First Fry (Blanch):

    • Heat oil in a deep skillet or pot to 325°F (163°C). Fry potatoes in small batches for 4–6 minutes until soft but not browned. Remove with a slotted spoon and drain.

    Second Fry (Crisp):

    • Increase oil temperature to 375°F (190°C). Return potatoes to the oil in batches and fry for 2–3 minutes until golden and crispy. Remove and drain.

    Season & Serve:

    • Immediately sprinkle with salt and any additional seasonings while the fries are hot. Serve with your favorite dipping sauces.
