Ingredients
- 1 whole-grain or spinach wrap
- 1/2 cup cottage cheese low-fat preferred
- 1/2 cup fresh spinach leaves
- 1/4 cup shredded carrots
- 1/4 cup cucumber slices
- 1/4 cup cherry tomatoes halved
- 2 tbsp red onion thinly sliced
- Salt pepper, and herbs (to taste)
- Optional: Hot sauce hummus, or mustard
Instructions
Wash and prepare all veggies. If preferred, warm the wrap slightly.
In a mixing bowl, season cottage cheese with salt, pepper, and herbs.
Spread cottage cheese over the wrap, then layer the spinach, carrots, cucumber, tomatoes, and red onion.
Fold the sides in and roll tightly.
Cut in half and serve immediately. Enjoy!
