Equipment

Ingredients
  

For the Pork Loin:

  • 3 –4 pound boneless pork loin
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

For the Cooking Liquid:

  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 4 cloves garlic minced

Optional (For Gravy):

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions
 

  • Pat the pork loin dry with paper towels. Rub with olive oil.
  • In a small bowl, mix salt, pepper, paprika, garlic powder, onion powder, thyme, and rosemary. Rub the seasoning blend all over the pork loin.
  • Turn the Instant Pot to "Sauté" mode. Once hot, add a little oil and sear the pork loin on all sides until golden brown. Remove and set aside.
  • Add chicken broth, soy sauce, Dijon mustard, honey, and minced garlic to the pot. Stir and deglaze the bottom.
  • Return the pork loin to the pot. Seal the lid. Pressure Cook on HIGH for 6 minutes per pound (e.g., 18 minutes for a 3-pound pork loin).
  • Once cooking is done, allow a natural pressure release for 10 minutes, then manually release any remaining pressure.
  • Remove the pork loin and let it rest for 5–10 minutes before slicing.
  • (Optional) For gravy, whisk cornstarch and water. Set the Instant Pot to "Sauté" and stir in the slurry, cooking until thickened.
  • Slice the pork loin against the grain and serve with gravy.
