For the Fries:

  • 4 large russet potatoes or use frozen fries
  • 3 cups vegetable oil for frying or 2 tbsp olive oil (for baking)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

For the Toppings:

  • 1 ½ cups shredded cheddar cheese or a cheese blend
  • ½ cup cooked bacon crumbled
  • ¼ cup sour cream
  • ¼ cup green onions chopped
  • ¼ cup jalapeños optional
  • 1 tbsp hot sauce optional

Instructions
 

Step 1: Prepare the Fries

  • Cut the potatoes into thin strips or wedges. Soak them in cold water for 30 minutes to remove excess starch. Drain and pat dry.
  • For crispy fries: Heat oil in a deep fryer or large pot to 350°F (175°C). Fry potatoes in batches for 3–4 minutes, then remove and let them rest. Increase the heat to 375°F (190°C) and fry again for another 2–3 minutes until golden and crispy.
  • For baked fries: Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt, and pepper. Spread evenly on a baking sheet and bake for 20–25 minutes, flipping halfway through.

Step 2: Melt the Cheese

  • Preheat the oven to 400°F (200°C).
  • Arrange the crispy fries on a baking sheet and sprinkle the shredded cheese evenly on top.
  • Bake for 5–7 minutes until the cheese is melted and bubbly.

Step 3: Add the Toppings

  • Remove from the oven and immediately sprinkle with crumbled bacon.
  • Drizzle with sour cream, then add green onions and jalapeños.
  • Finish with a dash of hot sauce if you like extra spice.

Step 4: Serve and Enjoy

  • Serve immediately while hot and crispy. Enjoy as is or with your favorite dipping sauce!
